Pistachio Rabri Delight



I have a confession to make. I do not like mushy food. There. I said it. You know when you want to eat something good and you take a bite but it turns all mushy in your mouth. Ugh! Oatmeal is the biggest culprit here. Unless it is filled with nuts or mix ins I just cannot eat plain oatmeal. Same goes for desserts like Umm Ali or soggy bread pudding. So, when I wanted to make Shahi Tukda I knew that the bread had to remain crisp for me to like it. This is what I came up with: a layered version which doesn't soak the bread in sugar syrup so they remain nice and crisp. I added some condensed milk to the rabri to give it that extra sweet punch and really loved  the outcome. I would say it is heavily inspired by Shahi Tukda but it is not quite the same thing and that is why I have renamed it. 

Recipe - Serves 18-20

Ingredients
For Rabri
1 Litre Milk (Full Fat)
1/4 Cup Sugar
1/2 Cup Sweetened Condensed Milk
1 Pinch Saffron

For Bread Base
10 Slices White Bread or Milk Bread
1/2 Cup Ghee

For Garnish
Sliced Pistachio
1/2 Cup Powdered Pistachio

Method
Make the Rabri
1. Place the milk in a saucepan and bring to a boil. Reduce the flame to simmer and keep cooking the milk till it is reduced to half the quantity. Keep stirring the milk in intervals. A skin will keep forming on the top, keep moving the skin back into the milk. 
2. Once the milk is reduced, add the sugar and condensed milk. Mix well and adjust sweetness according to personal preference. Add the saffron. Turn off the heat and cool completely.

Prepare Bread Slices
1. Cut off the sides of the bread slices and cut each slice in half. 
2. Brush each slice with ghee (like spreading butter on bread). Apply ghee on both sides of the slice.
3. Heat a large frying pan and toast the bread slices on a low flame. Make sure they turn crisp but do not burn. Toast all the slices and keep aside.

Assemble the Pudding
1. Take a 9x13 baking dish or pyrex. Pour 1/3 of the prepared Rabri on the bottom. Place 10 pieces of the bread in a single layer on the rabri. Pour 1/3 of the rabri on the slices. Repeat the layers with bread and the remaining rabri. 
2. Garnish with the pistachio powder and slices.
3. Place in fridge for minimum of 4 hours. Serve chilled.

Orange Chocolate Tiramisu Trifles


I am a big fan of the Dark Chocolate Orange bars from Lindt and love to incorporate them in baked goods. The chocolate is of fantastic quality and the orange flavour is just right. I made this Tiramisu trifle for a picnic in a larger pan and put the remaining cream and ladyfingers in these little glasses. They make for adorable presentation and are handy to serve at home.


I made a simple chocolate whipped cream using the dark chocolate and orange bar and dipped the ladyfingers in dissolved orange jelly (same as Jell-O in the US) to give them an intense orange flavour. Overall I was very happy with the way it turned out and so I am sharing this with you. You can scale this to any quantity you like. The below measurements yields a 8x6 glass dish with 4 inch high sides. I had just enough leftover to fill two mini glasses. Of course I forgot to photograph the dish and had to rely on these two the next day.

Recipe - Makes One 8x6 dish with 4 inch sides - An Everybunny Loves Food Original

Ingredients
2 Boxes Vanilla Flavoured Instant Pudding Mix
3 1/2 Cups Cold Milk
50 Grams Dark Chocolate Orange Bar (like Lindt)
1 Package Orange Flavoured Jelly
1 Cup Boiling Water
1 Cup Cold Water
2 Cups Whipping Cream
1/4 Cup Powdered Sugar (more or less as per taste)
1 Packet Ladyfinger biscuits (approx. 18 biscuits or as many as you need to fill the dish)
Cocoa Powder for dusting
Fresh Orange Segments for decorating

 
1. In a medium bowl, whisk together the cold milk and vanilla pudding mix. Mix well till smooth. Cover and place in fridge till needed.
2. Place the chocolate in a microwave safe bowl and melt in 15 second intervals. Keep aside to cool completely.
3. Dissolve the jelly in the boiling water and then add the cold water. Cool completely but do not let it set.
3. Place the whipping cream in the bowl of a stand mixer and whip on high till you get soft peaks.
4. With the mixer running slowly add the melted chocolate and whip to stiff peaks. Taste and add powdered sugar, adjust to the sweetness that you like.
5. Now its time to assemble the trifle, keep the trifle dish in front of you and the ladyfingers, orange jelly, pudding and whipped cream ready to use.
6. Dip one lady finger in the orange jelly liquid (do it very quickly, not more than 1 second). Place it on the bottom of the trifle dish. Repeat with the ladyfingers till you have one layer covering the bottom of the dish.
7. Spread two cups of the pudding evenly on the ladyfingers and then add one cup of the whipped cream layer.
8. Repeat the ladyfinger, pudding and whipped cream layers.
9. Dust the top with the drinking cocoa powder and decorate with fresh orange segments. Press a layer of cling film on top and place in fridge for at least 4 hours before serving. Serve Chilled.

Oreo and Chocolate Pudding Trifle


If you have any Oreo loving friends and family, make this super easy trifle for them and watch them sigh with pure pleasure. A layer of crushed oreos is topped with chocolate pudding and another layer of whipped cream and cream cheese. Since everything comes from a box this recipe is good to have in your arsenal when you are doing a lot of cooking and dessert is the last thing on your mind. You can scale the quantity as you like to make as much or as little pudding you think you can eat. Or if you want the dessert to be your showstopper you can make everything from scratch (yes, the Oreos also). This trifle fed a lot of people and there was plenty leftover too.

Recipe

Ingredients

2 Boxes of Instant Chocolate Pudding Or Cookies n Cream flavor
4 Cups Cold Milk
2 Cups Heavy Whipping Cream
One 300 Gms Pack of Cream Cheese
½ Cup Powdered Sugar
1 Box Oreos (the big box approx 3lb 4.5 oz)

1. Place the heavy whipping cream in the bowl of a mixer and whip till you get stiff peaks. Using a spatula fold in the cream cheese and powdered sugar till mixed well. Place the cream mixture in the fridge.
2. Prepare the pudding according to package directions and place in fridge.
3. Arrange oreos along the circumference of the trifle bowl. I dipped them on one side in milk and this helped them stick to the glass. Break a few oreos in four pieces each. Place all the pieces on the bottom of the bowl and continue till they reach the height of the oreos on the side.
4. Remove the pudding and cream mixture from the fridge. Pour half the pudding mix on the oreos and smoothen with a spatula.
5. Pour half the cream mixture on the pudding layer and smoothen.
6. Repeat all the layers. Decorate as desired.
7. Cover with plastic wrap and place in the fridge for 2-3 hours atleast for the oreos to soften.
8. Serve chilled and enjoy!

Strawberry Tiramisu or Charlotte or Whatever!!



I am not sure what to call this dessert. It is called a Tiramisu but the only similarity the two have is that they are layered. It looks like a Charlotte Ruse from the outside but that's again where the similarity ends. But as they say, Whats in a name? right? The important thing is that it tastes amazing and is very easy to make.


We had company on the weekend and I wanted to make an elaborate dessert as I never get to make it for the two of us. I had some frozen strawberries in the freezer and wanted to use them up. This recipe caught my eye on the Kraft website and it had fab reviews. I did make a few changes as I couldn't find all the ingredients (like Cool Whip, which I had seen a thousand times in the store, but when I went to buy it they had removed it from the shelves!!! Grrr) and I must say that Stabilized Whipped cream is a good substitute for Cool Whip.

Ingredients - This is a great dessert for a crowd
2 Packages (200 gms each) Ladyfinger biscuits (Saviordi)
500 Gms Fresh or Frozen Strawberries
3 Tbsp Castor Sugar
200 Gms Philadelphia Cream Cheese (I used light)
2 Packets (3.4 oz - 4 serving) Jell-o Instant Pudding - I used Cheesecake flavor as that is all that was available on the shelves, the original recipe called for vanilla flavor.
3 1/2 Cups Cold Milk
For The Stabilized Whipped Cream (You can use 3 Cups Cool whip instead)
1 1/2 Cups Heavy Cream (Chilled)
1 1/2 Tsp Gelatin
1 1/2 Tbsp Cold Water
2 Drops Red gel Food colouring

Prepare the Strawberries
Place the strawberries on a plate and sprinkle with caster sugar to release juices and sweeten them. Drain the liquid before using. 

Prepare the Stabilized Whipped Cream (You can use 3 Cups of Cool Whip instead)
1. Place the cold water in a small microwave bowl and sprinkle the gelatin on it. Wait till the gelatin absorbs all the water.
2. Heat the gelatin in the microwave for 15 seconds till it melts ( you can also do this on the stove top in a saucepan).
3. Place the cream in the bowl of your stand mixer and whip to soft peaks. Add the gelatin (if it has started to set heat in again), sugar and red colour. Whip till you get stiff peaks.

Prepare the Pudding Mixture
1. Beat cream cheese in large bowl with mixer until creamy.
2. Gradually beat in milk,  add dry pudding mixes; beat on low speed 1 min. or until well blended.

Assemble The Dessert
1. Trim 25 biscuits to the height of your springform pan (10 inches). Line them all along the sides and use the trimmings on the bottom to help them stand. Fill the bottom completely with the ladyfingers.
2. Add half the pudding mixture and whipped cream. Cover with the strawberries (do not use the liquid).
3. Repeat with a layer of ladyfingers and remaining pudding and whipped cream.
4. Cover with plastic wrap and refrigerate overnight.

To Serve
Remove plastic wrap and run a knife around the sides of the pan to ensure the ladyfingers are not stuck to it.
Gently open the sprinform latch and remove the mould. Tie a ribbon around the sides and decorate the top with additional berries, grated chocolate or whipped cream.

Daring Bakers Feb 2011 - Mango Panna Cotta and Florentines



Blog Checking Lines: The February 2011 Daring Bakers’ challenge was hosted by Mallory from A Sofa in the Kitchen. She chose to challenge everyone to make Panna Cotta from a Giada De Laurentiis recipe and Nestle Florentine Cookies.

For this months challenge we had to make two things that were complete opposites. Soft, smooth and silky panna cotta with crispy, crunchy Florentines. While I have eaten panna cotta once before I had never even heard of Florentines. Whenever we have a challenge to make something I have not eaten before I feel a little lost as I have nothing to compare my results against. Though my cookies tasted good they did not spread out into thin discs. I guess I was supposed to flatten them with a spoon before putting them in the oven. I made only a quarter of the recipe and loved the cookies.
The panna cotta was very easy and straightforward to make. I replaced the honey and added mango pulp to make mango panna cotta and added a layer of mango jelly which I made using the pulp and gelatin. I reduced the recipe by a third because I didn't want to have so much of the creamy stuff to tempt me and still got 4 servings. I loved the taste of it but hubby was not a big fan. He wanted more of a mango punch and I ended up eating all four servings! (Over a few days mind you).


Ingredients - 1/3 of the Original Recipe with my changes in Red

1/3 Cup Whole Milk (80 ml)
1 Tsp (5 ml) Unflavored Powdered Gelatin
1 Cup (240 ml) Whipping Cream (30+% butterfat)
2 Tbsp (30 ml) Honey - I used 4 Tbsp Mango Pulp
1 Tsp (5 ml) Granulated Sugar - I used 2 Tsp
Pinch of Salt

1. Pour the milk into a bowl or pot and sprinkle gelatin evenly and thinly over the milk (make sure the bowl/pot is cold by placing the bowl/pot in the refrigerator for a few minutes before you start making the Panna Cotta). Let stand for 5 minutes to soften the gelatin.
2. Pour the milk into the saucepan/pot and place over medium heat on the stove. Heat this mixture until it is hot, but not boiling, about five minutes. (I whisk it a few times at this stage).
3. Next, add the cream, honey (I added the mango pulp after the sugar), sugar, and pinch of salt. Making sure the mixture doesn't boil, continue to heat and stir occasionally until the sugar and honey have dissolved 5-7 minutes.
4. Remove from heat, allow it to sit for a few minutes to cool slightly. Then pour into the glass or ramekin.
5. Refrigerate at least 6 hours or overnight. Add garnishes and serve.

Nestle Florentine Cookies

2/3 Cup (160 ml) (150 gm) (5.3 oz) Unsalted Butter
2 Cups (480 ml) (160 gm) (5 2/3 oz) Quick Oats

1 Cup Granulated Sugar
2/3 cup (160 ml) (95 gm) (3⅓ oz) All Purpose Flour (Maida)
1/4 cup (60 ml) Dark Corn Syrup - I used Lyle's Golden Syrup
1/4 Cup (60 ml) Whole Milk
1 Tsp Vanilla Extract
Pinch of Salt
1½ Cups (360 ml) (250 gm) (9 oz) Dark or Milk Chocolate - Prefer Semi Sweet as the cookies are quite sweet

1. Preheat oven to moderately hot 375°F (190°C) (gas mark 5). Prepare your baking sheet with silpat or parchment paper.
2. Melt butter in a medium saucepan, then remove from the heat.
3. To the melted butter add oats, sugar, flour, corn syrup, milk, vanilla, and salt. Mix well. Drop a tablespoon full, three inches (75 mm) apart, onto your prepared baking sheet. Flatten slightly with the back of your tablespoon, or use a spatula. (Flatten well as mine didn't spread on their own)
4. Bake in preheated oven for 6-8 minutes, until cookies are golden brown. Cool completely on the baking sheets.
5. While the cookies are cooling melt your chocolate until smooth either in the microwave (1 1/2 minutes), or stovetop (in a double boiler, or a bowl that fits atop a saucepan filled with a bit of water, being sure the water doesn't touch the bottom of the bowl).
6. Peel the cookies from the silpat or parchment and place face down on a wire rack set over a sheet of wax/parchment paper (to keep counters clean).
7. Spread a tablespoon of chocolate on the bottom/flat side of your cookie, sandwiching another (flat end) cookie atop the chocolate.

Figure Friendly No Bake Cookies


One night as I was sitting all alone at home and browsing the web I came across this recipe and did a double take. Chocolate? Check. Peanut Butter? Check. Figure friendly and no bake? Wow! This was too good to be true. So I ran to the kitchen and a quick pantry survey told me that I had all the ingredients on hand (even the reduced sugar preserves!) I quickly whipped this up and after half an hour of setting in the fridge I was happily munching on a fudgy treat. I am not sure on the figure friendly part but these are a nice alternative to baking on a hot day.

Recipe Source - Given below as is from Cooking Ventures (My changes and notes in red)

Ingredients - Makes 1 Dozen Cookies

2 Tablespoons Butter
1/2 Cups Low-fat Milk (skim Works Fine) – Used Skimmed Milk
1/4 Cups Sugar
2 Pinches Salt
3 Tablespoons Cocoa Powder
1/2 Cups Reduced-sugar Strawberry Preserves – Used Sugar Free Raspberry Preserves
1/4 Cups Peanut Butter (reduced-fat Works Great) – Used Reduced Fat but would prefer to use regular next time
1/2 Tsp Vanilla
2 Tablespoons To 3 Tablespoons Splenda (Depending On How Sweet You Like Things) – Omitted this
1-1/2 Cup Rolled Oats – Used Instant Oats
2 Tbsp Chopped Almonds
  1. Add a piece of waxed paper to a small cookie sheet. Place the cookie sheet in the freezer to chill.
  2. To a medium saucepan over medium heat, add the butter, milk, sugar, salt, cocoa powder, and strawberry preserves. Use a fork to break up any large pieces of strawberries. Whisk often and bring to a light simmer, then immediately remove the saucepan from the burner.
  3. Add the peanut butter, vanilla, and Splenda. Whisk lightly to incorporate the peanut butter.
  4. Add the oats and almonds and use a wooden spoon to stir the mixture. Allow the mixture to rest in the saucepan for 6 minutes, stirring after 3 minutes. This resting period will allow the mixture to firm up slightly.
  5. Use a cookie scoop or a spoon to place mounds of the mixture on the chilled cookie sheet. Refrigerate for at least two hours to allow the cookies to fully gel. Keep refrigerated until ready to serve. These cookies, when properly prepared, should not be hard and brittle. They should be soft and fudgy.
Note from Cooking Ventures: I tried this recipe using sugar-free preserves, without success. To me, sugar-free preserves have a very artificial taste that is distracting in this recipe. Reduced-sugar preserves are not normally made with artificial sweeteners (but do have a reduced amount of sugar). - My husband and brother tasted the cookies and did say that they got an artificial taste so I can vouch for this! Will surely use reduced sugar or regular preserves next time.
